MEET THE SPEAKERS:

Neal Lavender, MHS, PHR, CDM
JPS Health Network
Neal Lavender has spent a lifetime career helping hospitals as well as individuals make the connection between value-driven practices and bottom-line results. He has been a successful executive leader at several large health systems in the country. Neal is currently the Executive Director of Food and Nutritional Services at JPS Health Network. He started his tenure at JPS in 2016. JPS Health Network is a 582-bed acute care hospital with a network which includes more than 25 community-based clinics in the Fort Worth area.

Neal earned his Bachelor of Science in Hospitality Management from East Carolina University and a Master of Science in Health Services Administration from Central Michigan University. He also is a Certified Dietary Manager (CDM) and Certified Food Protection Professional (CFPP).
Neal is currently the Treasure with the Association for Healthcare Foodservice (AHF) National Board. He has also served on various AHF committee positions for years. He was a recipient of CBORD’s Visionary Award in 2021 and AHF’s Exemplary Leadership Award in 2020.

Simone Nicolas, MS RDN CDN 
NY State Office of Mental Health, Kingsboro Psychiatric Center
Simone Nicolas is an accomplished food and nutrition professional with more than 25 years of healthcare experience and a passion for improving outcomes through nutrition, elevating the services and experience provided to patients and residents.
Simone has developed and implemented group diabetic and weight management education programs for short-term care patients and has championed individualized nutrition interventions to enhance the quality of life for adults in long-term care.
A seasoned leader, she currently serves as the Nutrition Services Administrator for the NYS Office of Mental Health, where she directs the foodservice department and clinical dietetic program at Kingsboro Psychiatric Center, in addition to oversight of the dietetic services in community based residential settings. Prior to that, Simone was the corporate director of culinary services at National Health Care Associates, which operates a post-acute network of 39 skilled nursing and assisted living centers throughout the northeast.
Early in her career, Simone transitioned from acute care to long-term care, where she continues to not only practice nutrition but has played an integral role in the operational growth of foodservice programs. Simone was also a teaching nutritionist at SUNY Downstate Medical Center where for 14 years she works closely with pediatric physicians to promote healthy lifestyle behaviors in patients.
Simone completed her didactic training at Brooklyn College, part of the City University of New York and continued at Brooklyn College to complete a Master’s Degree in Nutrition. She also holds a Certificate of Training in Adult Weight Management from the Commission on Dietetic Registration.
Simone sits of the AHF National Board of Directors and is also the President of the AHF New York Chapter. She maintains active memberships in other professional organizations such as AND and ANFP, seizing every opportunity to learn from colleagues as well as share knowledge and mentor others.
