Navigating Foodservice Regulations in Retail

This webinar is jointly presented by AHF and the Management in Food and Nutrition Systems (MFNS). 

The session will provide an in-depth review of current foodservice regulations and highlight the complexities around regulatory oversight for central kitchens. Key topics include food safety in centralized production, food traceability practices, and updates to the most current food code. An additional focus will be placed on strategies for norovirus prevention to safeguard public health. The webinar will conclude with a Q&A segment and resources for further learning.

MEET THE SPEAKERS:

Erin Mertz
Director RD&E, Food Safety and Public Health

Robin serves as the assistant vice president for the Nutrition Services, Clinical Shared Service at Intermountain Health. In this role she oversees culinary services, clinical nutrition, and nutrition security operations for 34 hospitals, 5 retail-only locations, and 400+ clinics. As a registered dietitian, she is a passionate advocate for the provision of high-quality nutrition and delicious food. Robin is a Fellow of the Academy of Nutrition and Dietetics and graduate of the National Leadership Academy for Public Health. She obtained a Master of Healthcare Administration from Northern Arizona University, Master of Science in Clinical Nutrition from Rosalind Franklin University, and completed her undergraduate degree in Dietetics at Ohio University. When not at work she can be found enjoying outdoor adventures with her family or in the kitchen cooking and baking with friends and family.  

Mandy Sedlak, RS/REHS

Mandy is a Director of Global Food Safety and Public Health at Ecolab. She provides insights on regulatory and industry trends and is responsible for helping customers mitigate risks in the areas of food safety, guest experience, public health, workplace safety and sustainability. Mandy has over 20 years of experience in restaurant and supply chain food safety, quality assurance, and procurement leadership at leading foodservice brands. She is also an active member of multiple organizations including the Association of Food and Drug Officials (AFDO) including Healthy People 2030, the Conference for Food Protection (CFP) as Chair of the Food Safety Management System Committee, National Restaurant Association (NRA), and the National Environmental Health Association Business Industry Affiliates, (NEHA BIA). Mandy holds a Bachelor of Science degree from the University of North Dakota. She and her two children Lydia and Frank live in IL.
